What is a Smash Burger?

Smash burgers are hamburgers that are flattened and cooked on a hot surface like a flat top griddle or cast iron skillet. The best part about this burger is the crispy edges (drooling). These Blackstone smash burgers use salt and pepper seasoning and you can customize it with all your favorite toppings.

  • Ground beef: This smash burger recipe uses high-fat, quality ground beef, usually 80/20 (80% lean meat and 20% fat). The higher fat content contributes to a juicy and flavorful patty.
  • Kosher salt: We use Diamond Crystal Fine Kosher Salt for almost all of our recipes. One teaspoon of kosher salt is equivalent to 1/2 teaspoon of table salt if you are using table salt as a substitute.
  • Ground black pepper: Pepper adds flavor to the overall burger! Use freshly ground black pepper for a more intense flavor.
  • Cheddar cheese slices: Cheddar cheese is the most popular and makes for a great burger. You can use mild or sharp cheddar, or try a different type of cheese altogether such as American or Pepper Jack.
  • Hamburger buns: Marrekus loves soft potato buns without sesame seeds, but you can use any bun you like. Personally, I love brioche buns. Both of us agree that whatever type of bun you use, lightly toasted is always best!
  • Toppings: The best toppings are lettuce, tomato, pickles, and onion. Bonus points if you caramelize onions in burger grease on the flat top! You can also make a classic burger sauce for your Blackstone smash burgers using mayonnaise, mustard, and pickle relish.

Special Equipment and Tools

  • Flat-Top Griddle or Cast Iron Skillet: A flat-top griddle, like the Blackstone, is ideal for making multiple burgers at once. You can also use a cast iron skillet, which works well for smaller batches. Both provide a hot, flat cooking surface for achieving that perfect sear.
  • Large Metal Spatula: A large metal spatula with a flat edge is essential for smashing the meatballs and flipping the burgers. It should be sturdy enough to press the patties without bending.
  • Burger Press (Optional): While not mandatory, a burger press can help you create uniform meatballs and ensure they’re evenly sized, making it easier to achieve consistent results.
  • Timer (Optional): Using a timer can help you keep track of cooking times, especially when achieving the perfect sear is crucial.
  • Cutting Board and Knife (for Toppings): Use a cutting board and knife to prepare and slice any toppings you plan to add to your burgers.

How to Make Blackstone Smash Burgers

Step 1: Preheat and Prepare

  • First, preheat a flat-top griddle or a cast iron skillet to high heat. A hot cooking surface is key for achieving that perfect sear.

Step 2: Shape the Patties

  • Divide the ground chuck into 6 equal portions, each about 2-3 ounces in size.
  • Roll each portion of beef into a ball. This helps create the perfect shape for smashing.

Step 3: Smash and Season

  • Place the meatballs on the hot griddle or skillet, and immediately press them down with a large metal spatula to smash them. The goal is to create thin, crispy edges.
  • Season the patties generously with salt and pepper. This adds flavor to your burgers.

Step 4: Cook the Burgers

  • Cook burgers until they’re browned, which takes about 1-2 minutes. You’ll notice the edges getting crispy and brown.
  • Carefully flip the patties and immediately top each one with a slice of cheddar cheese. Continue cooking until the cheese is melting and the edges and bottom of the burgers are nicely browned, usually about 1 more minute.

Step 5: Serve and Enjoy

  • Once burgers are ready, serve them with your favorite burger toppings. Classic options include lettuce, tomatoes, onions, pickles, ketchup, and mustard. However, feel free to get creative with your toppings!
  • Enjoy your Blackstone smash burgers – they’re hot, juicy, and full of flavor.

Recipe Notes and Tips

  • Don’t overcrowd the cooking surface. Cook the burgers in batches if needed to ensure they have enough space to spread out and develop that desirable crust.
  • Have all your burger toppings ready before you start cooking. Blackstone smash burgers cook quickly, so you’ll want to assemble your burgers promptly.

What if I don’t have a Blackstone?

If you don’t have a Blackstone, you can still make a smash burger in a pan on the stove. We recommend using a cast iron skillet. Just be sure to preheat the skillet evenly before using.

Commonly Asked Questions

How do I know when the smash burgers are done?

Once the edges are crispy and have turned deep brown or even slightly caramelized, that is a good indicator that they’re ready.

How hot should the cooking surface be?

The flat top or skillet should be very hot to achieve the desired sear and crust on the patty. We preheat the Blackstone on the high heat setting for these smash burgers.

What should I serve with smash burgers?

Keep it simple! Fries or potato chips are the perfect accompaniment.
