Tomato Basil Soup with Fresh Tomatoes

Our creamy tomato basil soup is made with fresh tomatoes, garlic, and onion, and basil.

– Fresh garlic – Fresh tomatoes – Yellow onions – Extra virgin olive oil – Salt – Ground black pepper – Chicken broth  – Fresh basil leaves – Sugar – Heavy whipping cream

Ingredients

Step 1

Preheat oven to 425°F (220°C). Prepare garlic heads with olive oil, salt, and pepper, wrap in foil, and set aside.

Cut tomatoes and onions, arrange on parchment-lined baking sheets, drizzle with olive oil, season with salt and pepper, and add garlic heads.

 Roast for 35 minutes, flipping if needed. Combine roasted veggies, chicken broth, basil, and squeezed garlic in a pot. Simmer for 20-25 minutes.

Blend soup until smooth and strain. Add sugar to taste, stir in heavy cream, and heat for 1-2 minutes.

Step 5

Prepare roux (optional) by cooking butter and flour until golden. Whisk into soup to thicken, season to taste, and serve with basil garnish.
