Toss peaches, vanilla, cinnamon, lemon juice, nutmeg, butter, sugar, and salt in pot over medium-high. Cook until butter is melted, then reduce heat and add flour slurry.

Grease baking dish, then roll out dough. Line bottom of dish with dough. Pour cobbler filling over the crust. Top it off with the remaining cobbler crust.

Bake for 30 to 35 minutes until it’s golden brown and bubbling. Let it cool for a bit, then spoon warm portions out with a side of ice cream and enjoy!
