MARDIS GRAS BEIGNETS

Yeast             Butter Egg Flour

INGREDIENTS

Water and milk Sugar Powdered sugar Oil, for frying

Combine warm water, warm milk, and yeast. Give it a gentle stir and let it sit for about 5 minutes.

ACTIVATE THE YEAST

Add butter and egg and mix. Gradually introduce flour and sugar. Then, increase the mixing speed or knead by hand until dough is soft and smooth.

MIX & KNEAD

Place dough in a bowl, and cover it up. Let it rise for an hour. Then gently deflate it and transfer to a greased bowl. Refrigerate 4 hours to overnight.

RISE DOUGH

Place dough on a lightly floured surface and roll it out into a 14″ x 10″ rectangle. Slice into 2.5″ squares.

ROLL & SLICE

Heat oil and fry for about 1 minute, or until beignets are golden brown and puffed. Sprinkle generously with powdered’ sugar
