The Bend Test

Grab the ribs with tongs, lift them from one end. If they bend easily and the meat starts to crack on the surface, they're good to go.

Toothpick Test

Poke a toothpick between the bones. If it slides in with little resistance, your ribs are ready to eat!

Bone Test

When the meat shrinks back from the bones and you can see about 1/4 inch of bone, that's a sign they're done.

Internal Temp

Use a meat thermometer. Insert it into the thickest part of the meat, away from the bone. You're aiming for 190-203°F for perfectly tender ribs.

Visual Check

Look for meat pulling away from the bone and a nice caramelized color on the surface. If it looks good and smells amazing, it’s probably ready!
