What is Mississippi Chicken?

Mississippi Chicken is incredibly tender and juicy chicken that’s been slow-cooked to perfection in a mix of tangy pepperoncini peppers, ranch dressing, and butter.

Ingredients List

  • 2 1/2 pounds boneless skinless chicken thighs
  • 1 (16-ounce) jar sliced pepperoncini peppers
  • 1/2 cup (1 stick) of butter
  • 1 (1-ounce) packet of dry au jus gravy mix
  • 1 (1-ounce) packet of dry ranch dressing mix (about 2 tablespoons)
  • slider buns

Equipment and Tools

  • Slow cooker

How to make Mississippi Chicken Sliders

  1. Place chicken into your slow cooker.
  2. Next, sprinkle the ranch dressing mix and au jus gravy mix all over the chicken.
  3. Pour sliced pepperoncini peppers and juices in the slow cooker.
  4. Add butter slices on top of the chicken.
  5. Set slow cooker to LOW and let cook for 6-8 hours. Or, if you’re in a hurry, you can cook it on HIGH for 3-4 hours.
  6. Once it’s done, shred chicken. It should be super tender and soak up all the flavors from the butter, ranch, and peppers.
  7. Serve chicken and peppers on slider buns for sandwiches.

Recipe Notes and Variations

Pepperoncini: Leave out the pepperoncini peppers or swap them for banana peppers.

Chicken: Try boneless, skinless chicken breasts instead of chicken thighs.

Chuck Roast: Instead of chicken, try our Mississippi pot roast, a mouthwatering Southern pot roast recipe featuring ranch dressing mix, au jus gravy mix, and butter. Just add a jar of pepperoncini peppers and grab some slider buns.

Slider Buns: Potato slider buns are our go-to for this recipe because they are soft and slightly sweet. Other great options are Hawaiian sweet rolls, brioche slider buns, sesame seed slider buns, and whole wheat or multigrain slider buns. You can also use standard-size hamburger buns instead of dinner roll/slider buns.

Rice: Serve Mississippi chicken with fluffy, white, buttered rice instead of slider buns.

Mashed Potatoes: Serve Mississippi chicken with creamy mashed potatoes instead of slider buns.

Slow Cooker Tips and Techniques

  • Slow Cooker Size: Crockpots come in various sizes; this recipe requires a standard 6 quart slow cooker (or larger). Overfilling or under-filling your slow cooker can affect the cooking process.
  • Layer Ingredients: Place chicken at the bottom of the slow cooker to ensure the thighs cook evenly and thoroughly, then layer the rest of the ingredients on top.
  • Liquid: Slow cooking retains moisture well, so you don’t need to add liquid to this recipe other than the juice from the jar of pepperoncini peppers. Adding more liquid may result in a watery recipe.
  • Don’t Peek: Avoid opening the slow cooker during cooking. Every time you lift the lid, heat and moisture escape, which can significantly increase cooking time. If you’re worried about your slow cooker’s lid not sealing properly or letting too much steam escape, you can place a layer of aluminum foil under the lid to help seal in heat and moisture.
  • Time Adjustments: You can adapt this recipe for slow cooking by adjusting the cooking time. Cook for 6-8 hours or if you’re in a hurry, cook on HIGH for 3-4 hours.
