- ¼ cup cornstarch
- 2 ½ cups panko breadcrumbs
- 1 ½ cups freshly grated Parmigiano Reggiano cheese divided
- 2 large eggs
- 2 tablespoons water
- 1 romaine lettuce heart chopped
- ½ cup Caesar dressing plus more for serving
- 4 sub rolls toasted
- Neutral oil for frying
