So, remember when you were a kid and ate fish sticks? I don’t know about you, but I LOVED fish sticks. Even as a young adult, I’ll admit, I would buy a blue box of the good stuff, bake it in the oven and dig in with lots and lots of ketchup.
Fast forward some years and I am still totally obsessed with them. But these are not your average fish sticks. They are made with fresh center cut salmon, and they are so good!
I like to call these “Mommy’s Grown-Up Fish Sticks”, after all, when you buy fresh salmon you are so adulting, right?! But to be honest, these are also kid-friendly (for those of you that are nice enough to share with your tiny humans). Try these once and I guarantee they’ll be a family favorite.
- canola oil for frying
- 1 large egg, beaten
- 1 cup all-purpose flour
- 2 cups panko (Japanese breadcrumbs)
- 1 pound skinless salmon, sliced crosswise into 1″-wide strips
- sea salt and freshly ground black pepper to taste
